Beer Battered Chicken Fingers and Onion Rings

So if you are like us here at themanscave.org, you're always looking for ways to impress your lady.  Well, we're about to give you a way tom impress her and enjoy a nice cold beer at the same time!  For this recipe, we used Sam Adams Irish Red, but you can use any beer that isn't too bitter or bold.  We like the Irish Red because it is a nice balance of hops and malts, and the flavor works nicely with both the chicken and onions. So here you go; for this recipe you will need:


2 lbs of chicken breast strips
2 sweet onions (Cut into rings)
2 tablespoons of house seasoning (Salt, pepper, onion powder, garlic powder)
2 cups of flour
1 egg
1 cup of very cold beer
Peanut oil for frying (You'll need between 2-5 cups of oil depending on your pot or pan)
Tongs
Whisk





Lightly coat the chicken strips in 1/2 cup of flour, shaking to remove any excess. Set aside. In a large pot or wok, preheat the oil to 360 degrees F. Basically just put the heat on just over medium and let it get hot for 8-10 minutes.
In a bowl, beat the egg using the whisk with the cold beer. Add the flour and house seasoning and mix lightly and quickly just until smooth. Dip the chicken into the batter, shaking to remove any excess. In batches add to the hot oil and fry, turning, until golden brown on all sides, 2 to 3 minutes. Remove and drain on paper towels.
Then repeat the process using the onions instead of the chicken.  When frying the onions, they only take 1 to 2 minutes total.
Man Cavers Tip: When the food comes out of the hot oil, sprinkle lightly with some salt.
Serve with a nice malty beer, such as Spaten Oktoberfest, and a bottle of hot sauce.
